Berry Yogurt Trifle-ish

Light and less than 100 calories!

Prep time: 20 minutes
Serves 2

I love yogurt.  I normally try to enjoy it for breakfast, however, there have been many occasions when I just don’t seem to finish the entire container.   Sound familiar?

Well, instead of having yogurt for breakfast why not enjoy it for dessert too?  This layer of berries and yogurt is easy enough to prepare while making dinner.  It is layered similarly to a trifle, except we’ve omitted the cake.

I think you’ll find the honey coating and drizzle perfectly balance the plain yogurt.  You might love it as much as I do that you’ll want it for breakfast, too! It’s a great addition to weekend brunches.

Special equipment: 2 oz. dessert cups

2 Tsp Honey
2 Tsp Walnuts, chopped
1/4 cup plus 3 Tbsp Greek Yogurt, Plain, Nonfat
6 Raspberries, quartered
14 Blueberries, halved

2 Raspberry
2 Blueberry
1 Tsp of Honey

Sprinkle walnuts covering bottom half of dish.

Berry Yogurt Trifle-ish Honey Coat

Spread 1 teaspoon of honey around the inside of cup or dish.

Berry Yogurt Trifle-ish Walnut Coat

Sprinkle walnuts covering bottom half of dish.

  • Spread 1 1/2 teaspoons of yogurt at base.
  • Arrange raspberries atop, gently pressing down.
  • Spread 1 tablespoon of yogurt atop.

Arrange blueberry halves atop.

Berry Yogurt Trifle-ish Blueberry Layer
  • Spread remaining 2 tablespoons of yogurt atop.

Garnish with raspberry, blueberry and honey.

Berry Yogurt Trifle-ish Finished

Enjoy as a light dessert, an afternoon snack or even breakfast!
