How are ya this morning? Even though I woke up feeling really tired this morning, it was nothing a quick weights session and my usual Wednesday morning spin class couldn’t fix! This week has been a really busy one so far with work, blog-related things, and Italy prep things, but I’ve got some exciting new things to tell you about (one of which you may have already noticed upon landing on my blog this morning!) Here we go:
1. Recipe of the Week: Two weeks ago, I bought some cauliflower with the grand idea that I was going to turn it into something fabulous, and, well… it just sat in the fridge. For 2 weeks. Yuck.
Although the cauliflower certainly didn’t look as nice as it did when I first bought it, the last thing I was going to do this weekend was let it go to waste. You guys know that I love butternut squash and carrots, so in effort to come up with a seasonal warm side dish that could act as a substitute for mashed potatoes (one of the world’s most boring side dishes in my opinion) I decided to combine all 3. The result?
Warm, wholesome goodness. Like a Snuggie for your insides.
This Whipped Cauliflower and Root Vegetable Pureecontains about 50% of your recommended daily vitamin C and almost 3x the RDI for vitamin A. It’s also very low in fat (unlike the standard mashed potatoes that can have all sorts of buttery fast hiding amongst those fluffy clouds) and high in fiber to keep you feeling full.
2. A new look for the blog! Unless you’re reading this in your inbox or via a service like Google Reader, you’ve probably already noticed this new thing. (If not, come on over and check it out! ) This is the third header to grace the front page of Eat Spin Run Repeat, and it’s my favourite of the bunch. Let’s have a look back:

3. Wehani rice. Ever heard of it? I have, but up until recently had no idea where to track some down. Whole Foods, you never fail me.
In my Wehani rice research I learned that Lundberg Family Farms, located in California, developed Wehani rice over a 10 year process. It’s derived from Basmati rice and is also a longer grain, and when cooked, turns brownish-red. In addition to their trademarked rice, Lundberg Family Farm also produces about 150 other organic products. According to their website,
Honey-red grains separate for a truly handsome presentation. The distinctive aroma will fill your kitchen with the promise of an irresistible nutty flavor. Beginning with an Indian Basmati-type seed, Lundberg® worked 10 years to perfect this incredible rice.
After boiling the grains in a pot for about 45 minutes, the water I used was as dark as red wine. I actually think I overcooked the grains a bit because they seemed much softer the than wild rice I usually make (aka I forgot about them on the stove and thank goodness the pot didn’t boil dry because that would have been a nightmare.) I put them to use in a pilaf that soon became just as much about veggies as it was about rice quantity-wise. In the mix was:
1 cup cooked Wehani rice
minced red bell pepper
1/2 tsp each coriander and cumin
1/8 tsp black pepper
1 tbsp extra virgin olive oil
2 tbsp lemon juice
It looked like this:
Taste wise, I really liked it! I enjoyed my pilaf/salad dish cold which allowed the rice to firm up a bit. Letting the whole thing sit in the fridge for about an hour really intensified the flavours, and the Wehani rice definitely had a unique taste.
