How are ya today? Is your week going well so far? It just hit me this morning that we’re very nearly at the end of January. WOW! If you’ve been reading for a while now, you’ll know that I usually do a goal check-in at the end of each month and set 5 new targets for the upcoming one. Since I used the beginning of January to create my vision board for the year , I’ll be getting back into the 5-goals-per-month routine at the beginning of February. For now though, let’s talk new things!
1. Recipe of the Week. This recipe was inspired by… well… a lack of planning. It randomly came together last week when I arrived home from work one night. In the car, I had been daydreaming about a dinner of roasted sweet potatoes and veggies with a nice juicy piece of chicken. But there were a few problems. Firstly, I had no sweet potatoes. Secondly, in a rush to get out the door on time that morning, I forgot to set a frozen chicken breast in the fridge to defrost. #Fail.
I did however, have some leftover butternut squash and some fresh tilapia in that wasn’t going to be fresh for much longer. Thinking on my toes, I pulled a couple of other bits and bobs out of the fridge and started to improvise.
One of my favourite herbs to mix with butternut squash is fresh rosemary. In a pan I combined some diced onion, cubed butternut squash, a little veggie stock, garlic, rosemary, and fresh thyme. When the squash had softened, I dumped everything into the Vitamix and made a nice smooth puree.
The fish in this recipe could easily be substituted for another white fish such as cod or haddock – anything with a mild flavour. Even though I’m a fish and seafood junkie, the butternut squash puree was my favourite part of this dish. So velvety and simple to make. In fact, if you’ve got extra squash, I highly recommend making a double or triple batch!
2. Trader Joe’s Sweet Sesame Seaweed. Try saying that one 5 times fast! When I was in Boston earlier this month, I made my first ever trip to Trader Joe’s, a grocery store I’ve heard rave reviews about and one I’ve been dying to visit. I came across a few delicious treats while I was there, one of which being this packet of dried seaweed:
You guys know I’m crazy about eating seaweed because it’s so nutritious (and awesome for your thyroid ), not to mention darn tasty. I’ve got my go-to seaweed snack brands , but I’m always open to trying new ones. The package claimed these were subtly sweet, and there were no horrible ingredients on the label like some of the cheaper seaweed packets I’ve seen on the shelves. (MSG? No thank you!)
Rather than just dump the whole bag into my mouth at once yesterday (tempting, but I refrained), I made a deconstructed sushi salad for dinner. In the mix:
A base of Romaine lettuce
Trader Joe’s Sweet Sesame Seaweed
My dressing was a simple combo of sesame oil, low-sodium soy sauce, and rice vinegar with a pinch of stevia.
So, how was the seaweed? To be honest, it was just ….. meh. Flavour-wise, it reminded me of a sweeter version of Annie Chun’s Sesame Seaweed Crisps that I usually buy from Fiddleheads . The bits tasted a lot more sweet than they did salty or sesame-like. What I didn’t like so much though , was the fact that when I reached into the bag, the contents seemed really greasy. You know when you reach into a bag of potato chips and your fingers come out all slimy? I can’t say I’ve done that in years but this experience reminded me of greasy potato chip fingers. Another drawback was the crumbliness of the seaweed. While nori sheets and seaweed crisps are easy to tear and relatively easy to get into your mouth without in once piece, this packet has the potential to make a big mess. Let’s just say it’s not exactly the type of snack you’d want to eat in the car, or any place where licking your fingers is frowned upon. So in summary, yes, just ‘meh’.

Do you enjoy seaweed snacks? Which brands do you like? I’m a huge fan, but I’ve learned that I just can’t handle wasabi flavoured ones. I’m all for spiciness (and Seasnax makes a Chipotle flavoured seaweed crisp that has a great kick to it!) but wasabi and my palate just don’t agree.
