Real Food Challenge Week 3: Meat

I know I have been MIA lately but it has been for a good reason. Today was my birthday so I took Friday and Monday off from work to hang out and relax. I stayed pretty disconnected from the internet too so I have a lot of blog reading to catch up on. But since it’s Monday, we’ve just started our third week on the Real Food Challenge.

This past week went pretty well. We were focused on beverages and were limited to coffee, tea, water and juice once. Scott and I both cheated a little so it wasn’t a complete success. I did manage to only drink coffee once per day and have quit drinking it at work but I had hot chocolate on Thursday because I didn’t bring enough food with me to work and I was hungry. I even went down to the little cafe that just opened in our building to get a healthy snack but it was closed so I settled for hot chocolate. Scott had a Dr. Pepper this past week which is so very rare. Neither one of us drinks soda. Occasionally we’ll have one but it’s not too often. It was actually kinda funny that this was the particular week that he decided he wanted a Dr. Pepper over his usual tea. We have also managed to keep up our fruit and veggie intake from week one. We are sticking to the revised amounts but are diligently making sure we are getting some in every meal.

Sunday, September 11- Saturday, September 17th

This week’s challenge is meats
Goal: Limit meat to 3-4 servings this week and when it is consumed, it should not be the main focal point of the meal. Also part of the challenge this week is to eat meat that is locally raised. Scott and I have not found local chicken yet but we do have it on the menu tonight so that won’t follow within the guidelines. We have been buying our beef local though. Our menu for the week has been made and it is all vegetarian minus the chicken tonight and salmon on Thursday.
Challenges: I don’t think there will be any real challenges for us this week. I am going to try and locate some local chicken though. Not sure if I’ll have any luck or not.
What I’m excited about: I am excited to try out a few new variations to some of our favorite meals this week. We are making a vegetarian pizza with eggplant and trying spaghetti squash for the first time.
