This week’s challenge is Fruits and Vegetables Goal: Eat a minimum of two different fruits or vegetables with every meal Challenges: This week, I think the biggest challenge will be finding ways to sneak more fruits and vegetables into Scott’s breakfast and lunch. What I’m excited about: I am excited about this week for a few reasons. 1. I’m all geared up to make this success. 2. We aren’t the best about making healthy vegetable sides with our dinners so I’m ready to give this a try and attempt some new recipes. 3. I have found some farmer’s markets to go to so that we can eat more in season and locally grown vegetables and dairy products which I talked a little about on Sunday night’s weekend recap post. So far we are 3 1/2 days into the challenge and all is going great so far. We have been getting in all our daily amounts of fruits and veggies and it’s been pretty painless. I have already realized the need to keep more fruits and vegetables around though. We have done to the store multiple times already to restock and we need to go again tonight so that we have food for tomorrow. This is also why Scott normally plans out our menus. He is much better at gauging how much food we need. Next week he’ll go back to planning the menu and I’ll just supervise and make sure there are enough fruit and vegetable sides.
