Ready, Set, Run!

My 4 mile run yesterday was awesome! Although it was cold out, I rocked a red headband that matched my red sweatshirt. I am starting to take advantage of the hills around here, and I am definitely stronger running up them now. I am used to hills – there’s hills EVERYWHERE in Vermont – but they are not always my friend. Mountains are my friend, especially now since they have snow on them again! Only a month or so until snowboarding, yahoo!

In other running news, I met with a coordinator of a kids running and nutrition program today for an internship for next semester. I am going to be recording the kids miles and keeping track of points they earn. Kids can earn points by running, completing food challenges like trying something new or doing mini nutrition quizzes. I’m also going to help out with some kids running events, writing a newsletter (maybe a running, nutrition blog for kids), and helping out at the Vermont City Marathon in May. Bonus: part of it is paid (the other is for credit) Superbonus: This is my dream internship – I love kids, running, and nutrition.

Also, if anyone is looking for a GREAT marathon, check out the Vermont City Marathon in Burlington, VT in May. It is a marathon or 2-5 person relay. There are spectators everywhere, the course is through tons of neighborhoods and on a bike path. It ends at the waterfront park, and you get to run on a boardwalk by the lake with tons of cheering and support at the end. I have done the 2 or 5 person relay for 6 years, and it is always the most fun and energetic race.

Once I tackle a few biochemistry chapters, I have a date with the kitchen for peanut butter oatmeal cookies requested by my boyfriend’s roomie. The best part of baking at their apartment is I don’t end up with 20 cookies to myself, and the cookies are always gone by the next day. I also get wonderful compliments like “Lauren knows what she’s doing in the kitchen. Try it – everything she makes is delicious.” They even like my baking experiments and will eat healthy cookies like sweet potato oatmeal raisin!
