Reader Recipe: Cold Veggie Protein Soup

Cold Veggie Protein Soup- from Nellie


  • 75g steamed broccoli
  • 50g steamed red pepper
  • 1/4 cup milk (I used fat free Lactaid brand)
  • 1/4 cup cottage cheese (again, I used Lactaid brand)
  • about a teaspoon and a half of fennel seeds
  • about a teaspoon of dry dill weed
  • pinch of xanthan gum
  • generous pinch of garam masala (don’t skip this, the spice just hangs in the background and brings out all the flavors)


  1. Blend everything together in the bullet.  I blended in stages, first the veggies with the milk, then the rest of the ingredients.
  2. I garnished with a bit of radish sprouts, they’re sharp and peppery and add a really nice contrast.

Eat cold, or heat in the microwave!
