Raw Carrot Cake Cookies and Raw Chocolate Fudge Energy Bars!

Hey everyone! I went grocery shopping today and found soooooooo many cool new things! I will have to post all about them later. Ever since I have started eating more raw foods and little to no dairy I have been completely fascinated with creating recipes that are still savory and sinfully sweet. I try as much as possible to eat raw most of the day. Dinner is a different story! lol I have to cook my lentils and simmer them with a variety of different stewed tomatoes. Hmmmm I should post about this! Note to self :)

My latest creation is inspired from my childhood favorite, Carrot Cake! I cannot get enough of this stuff :) So I have been contemplating, brainstorming, and playing with different combinations until I came up with this idea today! It's so delicious and has been a challenge for me to keep out of the freezer! I am skipping dinner tonite since I basically ate my dinner in Raw Cookies! lol That is an amazing dinner if you ask me! Have any of you ever tried the Coconut Butter from Artisana? It's amazing and super rich, my favorite! I have been eyeballing this wonderful concoction for a couple of weeks now. I could not pass it up today with my never ending itch to re-create carrot cake. I know there are so many other ways to do a spin off with this recipe and would welcome any ideas!



Raw Carrot Cake Cookies 20-23 depending on size

1/4 cup slivered almonds
8 medjool dates
1/2 cup shredded coconut and 1/4 cup for garnish
2 tbsp Agave Nectar
1/2 tsp salt
2 tbsp coconut butter
1/2 tsp cinnamon
1/4 cup raisins
1/4 cup carrots
1 tsp vanilla

Blend almonds to a fine powder. Add in your medjool dates and blend together. Add in coconut, agave nectar, salt, coconut butter and blend together. Remove and set batter in a mixing bowl. Add carrots to the blender until they are almost a paste like consistency. Pour the carrots and raisins into the batter and mix all together.

Roll into 20 to 23 little balls and either leave plain or roll in the remaining 1/4 cup coconut shavings. These are little joys and would make a great snack or dessert. Or if you are like me they are the perfect dinner replacement! lol



What types of cookies do you like to make and are they re-creations of your childhood favorites? My next attempt will be an Irish Creme inspired Butter Rum type concoction! Doesn't this sound good!? Well I sure think so! I will be working on that this weekend and hopefully have it ready for next week for all of you to see!



I started by changing up Averie's http://www.loveveggiesandyoga.com/ bar recipe. I made these the other day and they were quite yummy. I am a super chocolate fanatic and the richer and darker chocolate the better! I was actually thinking of baking them on a super low setting to act as a dehydrator but just loved them raw as usual. I of course as always froze the bars as soon as I was finished.



Chocolate Fudge Energy Bars

1/2 cup raw cashews
1/4 cup dark chocolate
1/2 cup raisins
1/2 cup shredded coconut
2 tbsp Raw almond butter
1 tsp vanilla
1 ripe mashed banana
3 tbsp agave nectar
2 tbsp cocoa powder
1/4 cup Chia seeds or flax seeds
1 cup oats (I used steel cut)
1 scoop of protein powder ( I used a vanilla flavored rice protein)
1/2 tsp salt

Blend cashews and chocolate together and pour into a mixing bowl. Add in coconut, almond butter, agave nectar, vanilla, salt, oats, cocoa, chia seeds, raisins, protein and salt. Mix everything together and pour into a pan. Spread everything out to an even consistency and freeze for 45 minutes or until firm. Remove from the freezer and cut into 8-12 servings depending upon your caloric needs. Place in a Tupperware container and stow away in the freezer until your ready to devour!

What bars have any of you created? I would love to hear your thoughts and learn as much as I can from any of you out there that have delicious snacks that are quick and easy to make.

That is what I love most about all of these types of snacks. They do not involve much time at all! And they taste so amazing without all of that fake junk used in packaged foods! lol I hope everyone is having a great week and look forward to reading your blogs ;)
