Rainy Day Run and Meals

Saturday morning brought me back to the Portland marathon 2 weeks ago (has it only been 2 weeks?!).  It was cool, gray and wet out.  However, I could choose to run as long as I pleased today which was about 4.5 miles with Cooper.  I didn't capture any pictures of our run, but according to the Pullman forecast, I will have the chance to replicate the pictures throughout the week. :(

I didn't hold a steady pace, partly because Coop had to "stop and smell the roses" so 9:20 was our respectable average.  My legs feel really good post-marathon, and I am thinking about my next race.  Not sure when/where, but I know I want to run a half marathon.

After a warm shower, I enjoyed a bowl of oats, banana, flax seed, and almond butter.  I was totally in the mood for warm, comfort food.  Note my awesome water glass from the Animal Rescue Site .  I added some lemon juice courtesy of a tip from Jackie Warner of Thintervention .  
And, Coop cuddled with his stuffed woodchuck, "Woody"

For lunch, I wanted a fresh salad of mixed greens, dried cranberries, walnuts, feta and baby carrots topped off with lemon poppy seed dressing.  I had a sweet potato on the side with a pinch of brown sugar.  I can eat those suckers minus the brown sugar though!  So good!

I don't consider myself a cook, nor have I enjoyed cooking in the past.  However, when provided with simple, healthy recipes, I don't feel so intimidated.  I'm super excited to try out my newly purchased book:
I bought the book because Runner's World had posted a simple naan-pizza recipe that takes about 15 minutes to make and is pure goodness.  Spencer and I are going to tackle some of the recipes together.  He is definitely the chef in the household!
Coop and I were on our own this weekend because Spencer was recruiting, so we spent the rest of the day planted to a comfy chair...which he proceeded to push me out of! How do you spend a rainy day?
