Animal Rescue Site . I added some lemon juice courtesy of a tip from Jackie Warner of Thintervention .After a warm shower, I enjoyed a bowl of oats, banana, flax seed, and almond butter. I was totally in the mood for warm, comfort food. Note my awesome water glass from the And, Coop cuddled with his stuffed woodchuck, "Woody"
For lunch, I wanted a fresh salad of mixed greens, dried cranberries, walnuts, feta and baby carrots topped off with lemon poppy seed dressing. I had a sweet potato on the side with a pinch of brown sugar. I can eat those suckers minus the brown sugar though! So good!
I don't consider myself a cook, nor have I enjoyed cooking in the past. However, when provided with simple, healthy recipes, I don't feel so intimidated. I'm super excited to try out my newly purchased book:
I bought the book because Runner's World had posted a simple naan-pizza recipe that takes about 15 minutes to make and is pure goodness. Spencer and I are going to tackle some of the recipes together. He is definitely the chef in the household!
Coop and I were on our own this weekend because Spencer was recruiting, so we spent the rest of the day planted to a comfy chair...which he proceeded to push me out of! How do you spend a rainy day?
