Hi guys! Busy week? I don't know about you but my to-do list has been massive but I have been successfull chipping away at it all week. Feels good - but it seems to keep growing - sup with that?
Currently, it's 29 items long, with 8 items complete - yikes. But I am determined to complete all items by the end of the day tomorrow, as Joe and I will be jet setting off to Florida for the weekend! Motivated. Lots of stuff - all good things!
Workout-wise, this week has been fantastic. I already have my long run out of the way as well as two great speed workouts. Ready for vacay.
One thing I wanted to share with you beforehand is Chocolate Covered Katie's Cookie Dough Baked Oatmeal recipe. I stumbled upon it a few weeks ago and have since made it 3 TIMES. I quote Joe: "These are the best. Keep making them. I get to eat one everyday."
I modified Katie's recipe slightly by doubling it, and splitting them into muffin-size cups. I chose to use maple syrup (organic), and a bit of olive oil. And I definitely used cinnamon, as suggested.
These are super healthy and dessert-like at the same time.
We keep grabbing them as pre-workout/run snacks.
Oh, and last time I made them I substituted the chocolate chips for dried cranberries and blueberries. They were awesome.
You have to make them, too.
Anyways - I have to go pack!
