Quick Din

I thought I would quickly share what I had for dinner tonight , it was quick, easy, and another meal in a continuing streak of really good dinners over the past week.

May I Present:

Black Bean-Banana (oh I went there) Salsa:

the black beans are hiding underneath (bad mixing on my part, Doh!)

~2 semi green banana’s, diced

~1 small red onion, chopped

~a genrous handful of cilantro, chopped

~1 can black beans, drained and rinsed

~1-2 jalepenos (depending on your spice tolerance), seeded and chopped

~1 tsp. cumin

~chilli powder, cayeanne pepper to taste

~juice of 1/2 a lime

Mix all ingredients into a bowl and refrigerate for atleast 3o mins. or until cold. Serve over tillapia steaks, cod, or even salmon. I had tillapia and it was FANtastic!

I was a little hesistant to have banana with such savory flavors, but with a little research I learned that banana is frequently used in Latin American and Spanish dishes with savory accompaniments.

I’m always up for trying new things!
