Pumpkin Spice Nut Butter

I know this post’s title has you wagging your tail and frothing at the mouth but you’ll just have to hold off. I mean, I guess you could scroll down but that will just kill all of the suspense! ;-)

Today started off with strong black coffee and a mushroom-spinach scone that I purchased yesterday, courtesy of Wildflour . Please excuse the cellphone photos. I somehow managed to leave my SD card in my laptop instead of placing it back into my camera. Genius, I know.

I look grainy but I swear I'm AWESOME!

I worked on a homework assignment for just under 2 hours before heading downstairs to complete a workout on the stationary bike in my basement. If you own a stationary bike/spin bike or don’t mind doing an unconventional workout in front of other people at the gym, you must try this workout! It is HARD but it rules.

I designed it to be more focused on the song you’re listening to instead of counting reps. For the verse of each song, you’ll do one exercise and for the chorus/bridge, you’ll do a different exercise. (Note: resistance refers to the difficulty level while pedaling on the stationary bike. Each exercise should be done while pedaling the bike.) This will torch your metabolism and those 5 lb. weights will feel like 10 – trust me!



Warm up for 3 minutes

No weights; Resistance 2

Verse: Bicep curls
Chorus/Bridge: Overhead press

5 lbs.; Resistance 3

Verse: Resistance 3
Chorus/Bridge: Resistance 4

No weights

Verse: Punches
Chorus/Bridge: Dumbbell side bend

5 lbs.; Resistance 3

Verse: Resistance 4
Chorus/Bridge: Reistance 5

No weights

Repeat this circuit twice. 

Post-workout was an apple with pumpkin spice nut butter. I made this lovely little snack last fall quite often and I’m so excited to share it with you! It’s healthy, satisfying, and so delicious. Plus, it literally takes 2 minutes to make! Win win.

Pumpkin Spice Nut Butter

Prep Time: 1 min
Cook Time: 25 sec.


  • 1 tbsp. creamy nut butter (I like almond butter but any will do)
  • 3 tbsp. organic canned pumpkin
  • Cinnamon + nutmeg to taste
  • 1 apple, sliced
     1. Combine nut butter, canned pumpkin and spices in a bowl.
     2. Microwave for 25 seconds.
     3. Spread onto sliced apple.
     4. Enjoy!

After snack time, I got ready and spent the day with Matty and his parents for their anniversary. We listened to The Eagles on the way up, which is probably one of Matty’s least favorite bands. It was fun to watch him suffer for a little bit. ;-) After one too many complaints from Matty, his dad popped in Hall & Oates. It was a nice change, listening to some classic rock!

Question of the day:
 Who is your favorite classic rock band?
Mine would have to be The Beatles. Cliche, but true. My favorite songs of theirs are “Dear Prudence,” “Here Comes the Sun” and “I’ve Just Seen a Face.” Gives me butterflies every time!
