Pumpkin Recipes, Do You Like Pumpkin & What are Your Favorite Recipes

Hi Friends! TGIF baby!  How has your week been?  I am glad it's Friday because that means I'll have time to hang out with Scott and Skylar the next few days, even though I'm busy with working a lot more these days, too.

In the spirit of fall, I thought it was time to whip up a batch of Pumpkin Honey Tofu    
If you don't use honey, feel free to use agave or maple syrup.  

And if you freeze, then thaw, then press your tofu before baking, it will turn out almost like bread. 
Like Pumpkin Bread.   
So good with the barely carmelized honey.  It makes it get a little crunchy on the edges.  Like how brownies get a little crunchy around the edges.  Same concept but tofu edges are healthier than brownie edges.   Pumpkin Honey Tofu

I just froze it, never bothered baking it and it worked.  I mean, it may not impress Julia Childs or Ani Phyo, but it impressed Scott.

From yesterday's post about my Sweet & Sour Veggie Stir Fry , I liked hearing what veggies and items you include in your stir frys.  It seems many of you were baby corn fans as kids, and even like them now.  Yes, baby corn really is corn .   Thanks, Katie , for the link.

Most of all, thank you everyone for the tips and info about Slow Cookers, Crockpots, and Rice Cookers .  It sounds like I could probably make things that aren't full of sodium and also could finally make beans from scratch .

Many of you pointed out that you love your rice cookers and actually use that more than your slow cookers.  The word on the street is that yes, you can make rice, beans, quinoa and more in a rice cooker.  And that they kind of can double as a slow cooker.   Some people report having better success at that than other.

I am probably leaning towards getting a rice cooker but any more info would be appreciated.  I am all about tips.  I have a post about my Favorite Kitchen Appliances , and would love to add The Perfect Rice or Slow Cooker to the list!  I love my crunchy raw food, but convenience and the make-ahead factor would be great.

Questions 1. This is probably a silly question, but do you like pumpkin?
I think that food bloggers disproportionately adore pumpkin.  I like it, but I am not in total love with it as much as some of you are!  That's sacrilege to admit in bloggieland though, I realize, since most everyone is in complete love with pumpkin it seems.
2. What's your favorite recipe using pumpkin?Hmmm, this is hard.  I'd say pumpkin pie but I can't wait to hear what all you True Pumpkin Lovers suggest.  I'd like to make more things with pumpkin but it has to be vegan and gluten free, easy and fast or I won't bother,  but don't let that stop you from telling me your favorite pumpkin recipes.  As I mentioned yesterday, I'm working more and have very little free time these days so the recipes have to easy-peasy!  Holly just posted a pumpkin banana bread today that looks great.

I also have a Vegan Peanut Butter Banana Bread (Gluten/Soy-Free) in case you're more of a Peanut Butter, less Pumpkin, type person.  Or tweak my recipe and add in some Pumpkin, and reduce/eliminate the Peanut Butter.

3. What do you do with the whole can if you only need a little bit of pumpkin?
Sometimes I see things like pumpkin oats or at-home pumpkin lattes and I want to make them, but I don't want to open a whole can of pumpkin when I just need a tablespoon or two.  Sounds lame but hey, that's just being honest!   

4. I'm still taking recommendations on slow cookers, rice cookers, pressure cookers.  If you have a model you love, feel free to drop in the linkJust one link per comment or leave separate comments if you are dropping in more than one link, because any more than one link-drop will send your comment into moderation and I may not see it right away. 

So far, This Zojirushi or This One is what I am looking at.  I have heard that Zoji's are the Vita-Mix of rice cookers.  I'd rather buy quality and have it last forever but of course, I wouldn't say not to something cheaper that you know works wonderfully!

5. What are your plans for the weekend? I am working, hanging out with Scott and Skylar and hopefully just enjoying what the forecasters are saying it going to be a bit of an unseasonably warm weekend.  No complaints from me!  I love low 80s and sunny!
