Pumpkin Pie Overnight Oatmeal

It’s all the flavor of pumpkin pie, with added fiber and protein! With this recipe, you don’t have to feel guilty about eating dessert for breakfast!

Ingredients

  • 1 cup steel cut oatmeal
  • 4 cups water
  • 1/2 cup unsweetened almond milk
  • 2 tbsp Chia Seeds
  • 2 tbsp Flax Seeds
  • 1 cup canned pumpkin
  • 1 tsp pumpkin pie spice
  • 2 tbsp pure maple syrup
  • 2 tbsp pure honey
  • 1/4 cup sliced almonds
  • 1/4 cup sliced pecans

Directions

  1. Combine all ingredients in your crockpot; whisk until smooth. Cook on LOW for 5-6 hours, and switch to KEEP WARM for the remainder of the evening.

  3. Combine all ingredients in a large glass bowl (that will fit into your crockpot); which until smooth. Fill crockpot halfway with water; place the bowl directly into the crockpot, immersed in the water. Cover and cook on LOW for 7-8 hours. You may find you need to turn it up to HIGH for about 30 minutes upon waking in the morning.
  4. Sprinkle with sliced pecans and a dash of cinnamon.
  5. Enjoy!
