Yup. Seriously. I’ve really been craving some sort of baked oatmeal recently. So when I stumbled upon Healthy College Girls post, I didn’t hesitate to jump on it and try it myself.
My recipie adapated a little bit different than hers, so here’s what I came up with…
GF Pumpkin Pie for Breakfast:
1/3 cup of GF oats
1/3 cup of canned pumpkin
1 egg white
1/3 cup of lactaid milk
1/2 tsp baking soda
1/4 cup of blueberries
Mine wound up in the oven for about 15 minutes at 350 F. I think mine was a little different because of the GF oats rather than the old fashioned oats. But still, I was a happy camper…
My only suggestion is to maybe add some stevia. It could be a little sweeter.
