Pumpkin Pecan Muffins

I was really hoping that this recipe would get me into the Fall spirit.

Fall, where are you?

I am talking about the weather where you can wear your favorite pair of jeans and light jacket, but be perfectly comfortable.

I was so hot my ride home from class today that I wanted to take my shirt off and show some skin. That way, instead of getting honked at, I would be getting whistled at. Ladies, you know what I am talking about ;)

While this recipe didn’t change the weather, it did fill my apartment with the Fall aroma. I bought a pumpkin spice candle the other day but I am afraid that I am going to burn down my building. I guess I will just have to bake muffins instead.

Candle or muffins?

Hmm… That is a tough one…

*Adapted from Live, Laugh, Eat *

Ingredients

  • 1/2 cup pumpkin
  • 1/4 cup organic turbinado sugar
  • 2 tbsp coconut oil
  • 1 egg, beaten
  • 1/4 cup milk
  • 3/4 cup spelt flour
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup chopped pecans
  • Handful of pumpkin seeds

Directions

  1. Preheat oven to 350*
  2. In a small bowl, beat together wet ingredients.
  3. In another bowl, mix the dry ingredients.
  4. Add dry ingredients to wet ingredients.
  5. Fold in pecans
  6. Fill six lined muffin cups with batter.
  7. Sprinkle the muffins with pumpkin seeds.
  8. Bake at 350 degrees for 18 minutes.

These muffins came out light, fluffy, and moist, which is exactly what I want in a muffin.

Excuse me, but I must go fill my apartment with the aroma of fall. Only because there are none left ;)
