Sorry for checking out on you guys the past couple days – I had a very full weekend and I’ve been pretty much going nonstop since Friday morning. A couple nights out with the girls, an afternoon with my mom, a four mile run and lunch with the fam over at my uncle’s house. I even managed to fit in a trip to the dog park which I hope will be a more regular thing now that the weather is cooling down.
As much as I enjoyed all the time spent with family and friends I’m definitely glad to have a little down time today before the work week starts up again. Aside from a dentist appointment a little later this morning I don’t have much on the agenda which feels pretty nice.
In the spirit of the season, I made a pumpkin dip to take to my uncle’s house yesterday and it turned out really well so I wanted to share the recipe with you guys.
Pumpkin Honey Goat Cheese Party Dip
1 large 29 oz can pumpkin puree (approximately 3 1/2 c)
8 oz Trader Joe’s honey goat cheese (you could also use regular goat cheese and add a couple T of honey)
3 T greek yogurt
4 T pure maple syrup
2 T brown sugar
1 1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
Directions: In a large bowl, combine pumpkin puree, greek yogurt and goat cheese and stir well until mixture is smooth (no lumps from the goat cheese). Add maple syrup, sugar and spices and mix well.
Serve dip cold alongside graham crackers and fruit – sliced honeycrisp apples go really well.
So do strawberries dipped into leftovers the next morning
