Protein, Protein, Protein!

Sorry for the lack of posting lately! I've been busy enjoying my Christmas holiday and time off. Here is a recap of what's been going on over the past few days...

I woke up to find the world covered in a blanket of snow on Thursday morning. I was secretly delighted to see the whiteness, despite hating the cold!

I had a banana as the first part of my breakfast.

And a slice of whole wheat toast with raspberry jam as the second part of my breakfast.


I had a lunch date with a dear friend of mine at my favourite sushi restaurant! I started with the green salad, my favourite!

I had a plate of salmon, red snapper, and crab sushi.

And loads of other tasty treats! We both left with full bellies and happy hearts!


I didn't have much of a dinner after such a filling meal, but I did make some Pad Thai with Casey to enjoy as leftovers in the future. We stir-fried up loads of vegetables and some steak before putting it all on a bed of Pad Thai noodles with Pad Thai sauce. I only ended up having a couple bites, but it was delicious nonetheless!

A Night Out

That night, my friend Janine and I went out to celebrate her friend's birthday. We had loads of fun dancing the night away and sipping on sweet martinis! I had a blast and didn't fall asleep until the wee hours of the morning.



I ended up sleeping in quite late on Friday morning. When I woke up, I was super hungry for a filling meal. I made a few protein pancakes from scratch that really hit the spot!

Cinnamon Protein Pancakes
-2 cups whole wheat flour
-4 1/2 tsp baking powder
-1/2 tsp salt
-2 tsp cinnamon
-2 tsp Stevia
-2 large eggs
-2 cups + 2 tbsp skim or almond milk
-2 tsp vanilla

Combine dry ingredients in a large mixing bowl, then add in wet ingredients. Mix well. Cook as you would regular pancakes and enjoy!

I also enjoyed a banana as a morning snack.


Due to having such a late breakfast and having a rather early dinner, I completely missed out on lunch! I ended up having two pieces of English battered haddock that I baked in the oven along with some homemade sweet potato fries. Everything was delicious, but despite being baked, the fish was still a little greasy. I think I'll stick with the multigrain tilapia I also have in the freezer instead.

A group of us got together last night to hang out and play a hilarious game of Cards Against Humanity. I munched on a couple tortilla chips and some tea, but that was all!


I spent so much time relaxing, working and enjoying my time off during the past couple days that I completely missed my workouts! Aside from walking Zeke in the deep snow and doing a little bit of hiking through the trails behind my apartment complex, I did diddly-squat over the past two days.

I did, however, get a chiropractic adjustment AND a much-needed massage! I also managed to fit in some stretching. Sometimes I need to remind myself that rest and recovery both physically and mentally are just as important as getting my sweat on. I think my body needed these two days to adjust to the new things that were happening to it with the chiropractor and massage appointments.

Well, today is a new day and I fully intend to sweat big time this afternoon!
