It's been another couple of busy days. I'm keeping my fingers crossed that I make it to the next round of the Foodbuzz Project Food Blog . Vote for me here , pretty please!? I'll know tomorrow at noon if I make it. I've already been thinking about what I would do for the next round and I think it will be cool.
I've been eating super healthy lately. For lunch I made my Cannellini Spread and ate it on a whole wheat tortilla with some cucumbers for crunch
This is really tasty, you should try it. Last night for dinner I got creative and roasted some butternut squash (fall vegetable, woo-hoo!) and sauteed some zucchini, onions and tomatoes plus black beans
I served it over some red quinoa
Wowsa! It was really delicious. I can't believe I used to not like vegetables. I ate this up with pleasure
It made a ton of leftovers, too. I made some zucchini bread on the side. It was made with buckwheat flour, I'm going to see if I can get permission to post the recipe
