Preserving your Lemons

Lemons are everywhere at the moment, and at the farm our trees gave us so many lemons that we were giving them away! I wish I could let you smell over the internet… these organic  lemons smell divine. You smell the rind and they smell beautiful, once you cut them open they smell even better and they are so juicy! I’m really spoilt!

Determined not to let all these lovely lemons go to waste, at the weekend I asked my dad to pick a couple of kilos of lemons for me. My plan? Peel them, juice them, freeze them.

I know what you are thinking! That is great, but now you have a fridge full of lemon ice cubes! So how will you use them? Simple! Think about everything you use lemon for. Cooking? Drinks? Disinfecting things?

Lemon are not available all year round, and often when I want fresh lemons, I can never find them. Lemon juice will keep in the freezer for a really long time. By storing them in ice cube bags and not containers, I can take as much lemon juice as I want, without having to thaw a whole container.

Lemon juiced in food

I use lemon juice when I cook fish or seafood. Sometimes I use it as a salad dressing along with some olive oil. I use lemon juice with yogurt to make sour yogurt. There are so many uses for lemon. You can be as creative as you want. Sometimes I add it to veggie stir fries

Lemon juice in drinks

I use lemon in tea with honey, the ice cube will just melt as soon as the hot water hits it.  I use lemon in my water sometimes, because I get bored of normal water. My mother told me she would add it to her diet sprite in Summer. I can see myself adding these lemon ice cubes to cocktails in the summer, or even blending them up adding a bit of honey to make a refreshing lemon granita.

Honestly the sky is the limit with lemon juice. So if you are lucky like me and have trees full and don’t know what to do with them, or if they are really cheap at the supermarket at the moment, go for it and get juicing!
