Potato Themed Recipes

I realized when I posted my recent recipe for Lemon & Dill Roasted Potato Sticks , that I have lots of potato recipes and I wanted to organize them and make them easier to access.

And as a total unplanned twist, it’s so fitting that this post about potatoes falls on the day before St. Patrick’s Day!  Is that the luck of the Irish, or what?!

Potatoes as Breakfasts/Snacks/Sweets

Add 1/2 c of cooked sweet potatoes into my Pancakes (Vegan, Gluten Free) for Vegan GF Sweet Potato Pancakes. Omit or reduce the banana in the recipe if you add sweet potatoes.

Chocolate Peanut Butter & Banana Oats + Add 1/4 c cooked & mashed sweet potatoes

Brown Sugar & Cinnamon Raisin Oats + Add 1/4 c cooked & mashed sweet potatoes

Biggie Microwave Banana Oat Cake with sweet potatoes:

Add 1/4 to 1/2 c cooked & mashed sweet potatoes rather than banana for a Microwaved Sweet Potato Oat Cake

From my last post about Orange on a Green Day , I’m glad you enjoyed my humor.

And thanks for telling me what the craziest things you’ve seen or witnessed while out running, walking, exercising, or just walking around the world.  I have seen some doosies, but hey, as I said, that’s life and not every day is a walk through the potato patch.
