I had a great Thanksgiving! It was full of 2 buck Chuck, mashed sweet potatoes, laughter and good conversation. I thoroughly enjoyed the laid back attitude of this year and the chance to re-unite with my Dad and his wife, Brenda, after 3 years. What a great chance to give thanks for mended relationships!!
Here’s a little snippet from our fun yesterday…..
And, in the spirit of this blog, I give you not only a recipe but a Post-Turkey Coma Fat Blaster Workout!!
Mashed Sweet Potatoes
1 bag cubed sweet potatoes from Trader Joe’s (or 2 large yams)
1 tablespoon coconut oil
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/3ish cup pecans (toasted is way better than raw)
1/4 cup unsweetened apple sauce
Boil sweet potatoes for about 10-15 minutes in cubed form. Once tender, place in big bowl and mash those babies up. Add in all ingredients but pecans and mix well. Sprinkle pecans on top and enjoy this delicious dish for breakfast, lunch or whenever you feel like a little carb boost!
So, the workout goes like this: you’re going to do 4 exercises. Starting with the first exercise, you’re going to do as much as you can in 20 seconds, then rest for 10 seconds, then repeat 8 times. Then you rest for a minute and then move onto the next exercise and do the same timing. It’s short, sweet and a kick in the pants!!
