Playing Catch Up

Pardon my absence on the blog yesterday.  Mondays have been very busy at my internship as we kick off our segments and clients for the week.  I'm back today and playing a little "catch up".
Kyle and I had what was a very important and momentous weekend.  We celebrated the 1st Anniversary of our gym, Evolution Fitness Orlando , with party at Rosen's Shingle Creek resort.  We had over 90 clients and their families in attendance.  Opening our own small business was NOT easy and took a lot of confidence and bravery.  It is without a doubt the best decision (besides getting married) that Kyle and I have ever made.  To be able to see him live his passion every day humbles me and makes me so proud.  I'll share pics and more about the event later this week. Thank you again to everyone who came out and those who sent kind words and comments.
Before we could party on Saturday afternoon, I had to get in my long run for the week.  My brain thought 12 miles seemed pretty tame compared to the 16 I did last week, but I felt the miles.  Are my legs finally tiring from training? I think that's a yes.

This run felt like the HOTTEST run of the summer for me.  I tried my best to hydrate and took an entire Clif gel at mile 6.  Then I almost "saw the gel again" about mile 8.  I think I'll be taking 1/2 a gel at a time from now on.
While the miles felt hard, I wanted to maintain a "race pace" and finish with negative splits.  We did!  Hooray!  Mile 11 was 9:11 and mile 12 was 9:00.
Total Miles - 12 - 1:53 - Average pace - 9:27 per mile
A special shout out to my running buddy Mel who celebrated her 30th birthday with an early morning run, a ninja roll on the brick streets, and one gnat treat.  :) Happy birthday girl!
After the run I rushed over to Rosen's Shingle Creek resort to clean up and get ready for the party.  You know you're a runner when you check into a hotel wearing compression sleeves! Once the official festivities were over we headed to the resorts pool for some libations and sun.  I had my first "Straw-BER-rita" and it was pretty good.  A wonderful summer drink.

We joined up with some of Kyle's friends from USF and our intern Adam for a steak dinner at A Land Remembered.  I thought the setting sun was the perfect light for a few pictures.
Kyle had the steak (shocker!) and I went for the Chilean Sea Bass.  I think I've said it before, but the sea bass here is the best in town.  I had it pan seared with lemon and capers.  It literally melts in your mouth.
Sunday we slept in and enjoyed breakfast at the hotel before heading home.  It's always a little bit of a bummer when a weekend you have looked forward to for months is over.
We cleaned house, napped, and went to Kyle's cousin's house for dinner.  Taina and I are both BIG Real Housewives fans, so we decided that an Italian feast was needed to celebrate Teresa's upcoming court date .  I had a tomato salad and pasta with crab, olive oil, arugula, and tomatoes.  It was simple and delicious.  I have some leftovers that I can't wait to eat later in the week.
Monday was back to clean eating, work, and fitness.  Kyle and I both got in BIG workouts that focused on legs.  We did sets of leg press, hamstring curls, leg extensions, and heavy squats and tried to work on finding our best working weight.
