Pink Skies, Knitwear and Granola for Fall

Posted Sep 21 2012 2:32pm
Woah there..Friday?!

This week has just been weird. I’ve basically spent the whole week in bed because I got really quite unwell. It was quite scary but today I finally feel like I’m back on planet Earth and right now I’m looking at the gorgeous evening pink sky.

Just another reason why I love this time of year so much…

And now that it is officially Autumn (Fall for you US readers!), I decided to go back to my love of knitwear :)

Whilst I still haven’t been that inspired to bake despite the cooler temperatures, I did decide to put my oven on and make some granola for a change! I was inspired by Love Grown’s Granola as I recently purchased some and remembered that a while ago I had the chance to try a different of their flavors, a cinnamon raisin one which had almonds and coconut in too and it was just yum!

4 cups oats (or gluten free oats) 1 tsp salt 1 Tbsp cinnamon 1 tsp ground ginger 1 ½ cups unsweetened coconut chips 1 cup almonds 1/3 cup melted coconut oil 1/3 cup agave nectar 1 cup dried raisins (leave out until the end)
Mix all together well and bake in the oven at 180 Degrees Celcius for around half hour, stiring occasionally so it toasts evenly.
Then add 1 cup dried raisins.

This is pretty much amazing given that it has my fave flavors in there!! :)

What’s your favorite type of granola?

What are you looking forward to in the cooler months?
