I used maple syrup instead of agave (I didn’t have any)
I made one batch with vanilla extract and one with peppermint extract
I wasn’t sure if I’d have problems with the maple syrup freezing, but it worked out great! Mixed ingredients ready to freeze:
The peppermint is strong but I liked it – it was a peppermint patty without the white filling. There was a faint coconut taste, but I think I noticed it because I knew it was in there! (same with the beans in the blondies)
Tonight I need to go running – I skipped yesterday because I didn’t want to. Sure it was super windy and I could have gone to the gym, but I didn’t. I’m not beating myself up over it, but I tend to be all or nothing, so when I miss one day it usually leads to two and so on. I’ll let you know how my run goes tomorrow – because I will go!
