Some of my favorite recipes come together when my fridge and I are both running on empty and I don’t have time to go to the store.
The other day I came home from Chinatown with some steamed vegetable baos (my very favorite dumplings) and a roaring appetite. I was in need of some greens — ASAP — but all I had on hand was a bag of broccoli coleslaw. After raiding my pantry and my crisper, I rounded up some peanuts, peanut butter flour, fresh ginger and liquid aminos and took to my cookbooks/pinterest/google for inspiration.
This recipe comes together in a flash, which is perfect for when you just can’t wait, and it gets even better with time. I hope you love it, too!
Peanutty Thai Coleslaw
Salty, creamy peanuts and bright ginger come together in this thai-inspired salad dressing. I’ve used it in a coleslaw, here, but it would be delicious over zucchini noodles or in a kale salad!
For the dressing:
For the salad:
Throw all of your dressing ingredients — except the water — into a food processor.
Add water to thin if you like a runnier dressing for your salads.
Toss broccoli coleslaw with dressing and set aside. While this is delish right away, it’s even better if you let it sit, so make it in the morning for lunch/dinner if you can!
Garnish with peanuts and a sprig of fresh cilantro.
