So what do you do when you have a quiet evening at home and some produce flaunting it’s expiration date in the fridge?
If you’re like me, you flip on the TV to watch Modern Family and make gazpacho.
Making a fruit soup at 8 pm on a Wednesday night? It’s ok, it all makes sense in my world.
I give you, Peach, Strawberry & Mint Gazpacho

Peach, Strawberry & Mint Gazpacho
(Recipe serves 2 but easily multiplies)
2 ripe peaches, quartered
8 strawberries, stems removed
1/4 of a medium red onion, chopped
2 1/2 Tbsp honey
1 1/2 Tbsp rice wine vinegar
8-10 mint leaves
Directions: Combine all ingredients in a blender and pulse until mixed well and desired consistency is achieved. (Tip: If you prefer a chunkier gazpacho you may puree half of the ingredients, remove from the blender, then chop the rest and combine). Garnish with sliced strawberries and mint leaves if desired. Enjoy!
This sweet and tangy gazpacho is a winner in my book. I will probably enjoy it for a light lunch or dinner. If you have the time, it is probably best made ahead and served after chilling in the refrigerator overnight so the flavors have a chance to marry. I know it’s not exactly a fall-esque recipe but it is still 90 degrees here in Arizona so I figure it works. Besides, we all need something to do with that waning summer produce.
