Pasta and Chicken Pesto

Last night Carla used her freshly made organic pesto sauce , with a delightful chicken and wholemeal fusilli pasta.

Pasta Chicken Pesto

  • Fusilli
  • Chicken breast (300g)
  • Onion
  • Garlic
  • Organic Pesto

Time needed: 15-20 Minutes

Cut up the chicken into chunky squares. Dice and onion and garlic. That’s your prep done.

Put the onion and garlic into the frying pan with a bit of water (if you want you can use oil). While that is frying, get the Fusilli on the boil.

Our fusilli takes 11 minutes to cook according to the box, Carla assures me that the chicken will be cooked in that time.

She throws the cubes of chicken in with the onion and garlic and pretty much leaves it go white; our cubes are about 1inch squared so they don’t take that long.

Then in goes the organic pesto. The chicken looks like its lightly coated with a green herby sauce. It smells divine.

Carla seasons with a bit of pepper.

Pasta is done, so is the chicken. I drain the pasta and mix in the pesto and chicken in the pot so all the flavours are combined. We serve it with a bit of parmesan cheese.

Without realising Carla made 3 portions; she has prepared an extra portion for me for lunch!
