I know that I promised to post part two of my weekend recap yesterday afternoon, but Lucy and I were stuck at the vet for much longer than we anticipated. I think that every dog and cat in town had an appointment at the same time as us!
By the way, Lucy had a shot yesterday and wagged her tail through the whole thing. I think it hurt me more than it hurt her!
And back to the weekend…
On Saturday, I was in the mood to take a drive and decided to head over to Trader Joe’s.
I got a big kick out of the fact that my car said, “Good morning” to me when I got in.
Actually, it was just displaying the name of the Lionel Richie song as it was playing, but I’d like to pretend that the car wanted me to have a good morning.
I picked up a bunch of fun things on my trip, including:
Frozen chicken burritos (Michael’s dinner last night)
Dr. Praeger’s California burgers (which you all reminded me to buy)
Unsweetened vanilla almond milk
Decaf peppermint tea (my very favorite tea)
Microwave popcorn (single serve packets)
Dinner was homemade pizza using vegetables from the farmer’s market. I had the cheeseless veggie pizza from Trader Joe’s that I purchased earlier in the day (shown below).
And here’s the homemade version…
Farmer’s Market Homemade Pizza
(Approximately 3-4 servings)
1 small eggplant (cut into 1-inch pieces)
1 cup red bell peppers (sliced)
1/4 pound turkey sausage (sliced)
3 garlic cloves (thinly sliced)
1.5 tablespoons olive oil
2 tablespoons fresh basil (chopped)
1 tablespoon white balsamic vinegar
Pre-made whole wheat pizza dough (I buy mine at Trader Joe’s)
2 tablespoons whole wheat flour
3/4 cup tomato sauce
8 ounces shredded part-skim mozzarella cheese
Salt & pepper (to taste)
Preheat your oven to 400 degrees. Toss the eggplant through the vinegar in a medium-sized bowl until coated. Spread on a baking sheet coated with cooking spray and bake for approximately 20 minutes.
Meanwhile, coat another baking sheet with flour and roll out the pizza dough. Spread the tomato sauce over the dough, and add the cheese.
When the vegetables have finished cooking, spread them out over the pizza dough and bake the pizza for approximately 15 minutes (or until the crust has reached your desired crispiness and the cheese has melted).
Season with salt and pepper (optional).
I did take a bite of the homemade kind (as always, for quality control purposes), and it turned out great. Michael loved it! Maybe next time, I will only put the cheese on half, so I can enjoy it as well.
The one from Trader Joe’s was really good too though!
On Saturday evening, Michael and I were watching the movie Waitress (a must-see, in my opinion), and he randomly asked if I like pancakes. I told him that of course I like pancakes (and not just protein pancakes…real pancakes!).
He replied, “Great. Tomorrow morning, I am going to make you pancakes.”
And wouldn’t you know, Michael woke up at 7:30 am on Sunday morning just to make me breakfast.
It was awesome!
He even promised that he’s going to make waffles for me next weekend. A girl can get used to this treatment!
After breakfast (and the ever so delightful clean-up process), we took a little drive. In case you haven’t noticed, we do that a lot!
I’m not sure how the subject came up, but I asked Michael if he remembered the McDonald’s menu song from the late 80s.
I told him that I vividly remembered going to McDonald’s with my parents and getting a record to take home that had the menu song on it. We’d take the record to my mom’s classroom (she was a teacher) since we didn’t have a record player at home, and my parents would listen to see if we won the sweepstakes.
We were really excited to find the song on You Tube later in the day. It was just as I remembered it!
Hahah! That song is stuck in my head now! Thanks a lot…LOL
What a sweetheart you have to make you breakfast like that! Mine cooks all the time, but since he’s on this uber-diet he never makes anything we actually want to eat. He gets bonus points though for trying to keep us healthy.
My other half has taken over many duties around the house since I injured my back – love that man:) He is a pretty good cook too. Glad to hear that both of you survived the vet’s visit. Enjoy Your Day – Happy Tuesday:)
That song is too funny! I could never remember it though. Your pizza looks delicious! My boyfriend will help prep meals, pizza is a good example of something he likes to help with, he is also the pancake maker becasue I’m pretty bad at it. But overall it’s mostly me!
