Pan Seared Chicken with Garlic, Lemon, Herb & Wine Gravy

We live in a crazy, bizarre world. Earlier I was reading my blog stats and checking out the search terms that leads people to my blog and you know what popped up? "Wives bent over"! Hahahahah, what!? I don't know how that has anything to do with my blog but somehow that search term got me 3 page views. Can you imagine someone sitting at their computer and thinking "hmmm today I'm going to type in Wives Bent Over into the google search bar" and then seeing my blog pop up? And not just one person, but THREE. Three guys (or girls?) are googling "wives bent over" and getting my blog link. How crazy and weird! Please cross all of your joints and pray that I didn't attract any creepers but with a search like that, I'm pretty sure I did. Yikes. I'm officially creeped out right now...but I'll admit that I can't stop chuckling at how bizarre it is haha!

Breakfast
Breakfast was a scrumptious bowl of Bobs Red Mill Gluten Free oats. I feel like I haven't had oatmeal in so long. This was a much needed bowl and every bite was just as amazing as the last.
 In my mix: Banana, Flax Seed, Almond Butter, Almonds, Cinnamon, and Honey.

Lunch
Lunch was a plate of BROWN RICE sushi split with the hunky hubs of mine. It doesn't look like it but these were definitely made with brown rice which is a much better alternative to regular white rice. Delicious!
 We bought new Red, White and Blue chopsticks at a Korean Grocery store recently and were pretty excited to try them out. Aren't they pretty?

Dinner
Dinner was pan seared chicken with a garlic, lemon, white wine and herb gravy.

Um, 2 words: EFFING AMAZING.
First, I sauteed 5 garlic cloves in olive oil, once they were browned I dumped them into my slow cooker along with one chopped sweet onion. I then seared chicken breasts in the garlic infused olive oil until they were browned and crispy on the outside.
Next I tossed the chicken, white wine, vegan earth balance butter, rosemary, thyme, lemon juice, pepper and salt into the cook cooker and let it cook on warm for 4 1/2 hours. The chicken absorbs all of the flavorings and stays hard on the outside yet super moist on the inside. Right before serving, I poured the liquid drippings into a saucepan and added 1/4 cup of spelt flour to turn into a gravy.

  I also received a gift from my best friend in TX today. The word love doesn't even begin to describe how much I loved this gift. She knows me too well. Pretty, short and blue dress? Right on point. Gourmet hot chocolate? Key to my heart. Beautiful A+F belt I can pair with anything? Why hello there, world's best friend!

I can't wait for her to see her gift! 

Back off ladies, she's mine ;)

And with that, I'm off to brew myself some more gourmet hot chocolate. T-minus 3 days till Christmas!
