Oven-Baked Sweet Potatoes & Onions

Posted Nov 26 2012 3:30am
Okay, remember yesterday when I said that I didn't spend that much time on Twitter? I lied...but only for today! I received my first email from Elle and Lindsay  with my pairing for the #elf4health challenge and I was excited. Which led to one of my Twitter list creations. Because I love lists.

Regarding #elf4health these two women have put soooo much thought and time into this. It is totally amazing. They have really made it very well rounded and fun!

If you didn't get in this time. Click the link above and you'll be taken to the sign up sheet for round 2.

Foodie Chat:

I'm trying to work on my food photography...well, my photography in general. So I took a picture of my morning shake and put it in a fancy glass. While it is probably a more appealing picture, it's kind of cracking me up since we all know what it normally looks like.

Smoothie:  Blueberries, bananas, spinach, rice milk, and  Smoothie CompleteLunch: two pieces of Totino's pizza. I don't know what to tell you. I was busy on Twitter. And Lucas cooked.  Snack:  Oven Roasted Sweet Potatoes (recipe below)  Dinner:  White rice, tilapia, green beans (and a little bit of low sodium soy sauce)

Workout:

I went downstairs to run two miles. I got to 2.5 and was about to quite and then figured what's  a few more minutes.

Today, I had this as a snack but tomorrow I plan to have this as a meal with some eggs (prefer scrambled but may need to hard boil to take to work). Of course, I already shared this with my elf. Sorry!

Twitter Chat (& ENERGYBits Discount Code):

So my Twitter obsession does work out for you sometimes....

ENERGYBits  is "fuel of choice for many runners, athletes and people who just want to be healthier! We’re already working with NHL, MLB, and NFL athletes as well as Olympians!" They are nitrogen based and made with algae and are vegan, organic, kosher, gluten free and non-GMO. I encourage you to check them out (and I'm sure you'll be hearing more about them).

But because I love you all, I asked if I could share the code with you and he said yes! Use the code BLOG for 10% off.  Whoohoo!

What I Read:

I've totally been all over Twitter today and you can't image the amount of chat I could share with you. Just look up the hashtag #elf4health and you'll see what I mean.

But I 've also been reading The Bridesmaid by Beverely Lewis. Because I love a good Amish romance. I'd consider being Amish if it wasn't for the Twitter thing. LOL

Pintersting:

In honor of #elf4health here is a totally uncreepy Elf.  Who happens to be in one of my favorite movies.

Small Talk:

Do you participate in Meatless Monday? Do you use energy gels or anything else for endurance? Do you like romance novels?
