Okay, remember yesterday when I said that I didn't spend that much time on Twitter? I lied...but only for today! I received my first email from Elle and Lindsay with my pairing for the #elf4health challenge and I was excited. Which led to one of my Twitter list creations. Because I love lists. Regarding #elf4health these two women have put soooo much thought and time into this. It is totally amazing. They have really made it very well rounded and fun!

Foodie Chat: I'm trying to work on my food photography...well, my photography in general. So I took a picture of my morning shake and put it in a fancy glass. While it is probably a more appealing picture, it's kind of cracking me up since we all know what it normally looks like.
Smoothie: Blueberries, bananas, spinach, rice milk, and Smoothie Complete. Lunch: two pieces of Totino's pizza. I don't know what to tell you. I was busy on Twitter. And Lucas cooked. Snack: Oven Roasted Sweet Potatoes (recipe below) Dinner: White rice, tilapia, green beans (and a little bit of low sodium soy sauce)
Workout: I went downstairs to run two miles. I got to 2.5 and was about to quite and then figured what's a few more minutes.
2 large julienned sweet potatoes Cooking spray 1 tablespoon olive oil 3/4 teaspoon salt 1/2 teaspoon black pepper 1 medium coarsely chopped onion 1 tablespoon butter
Directions
Preheat oven to 325°
Place sweet potatoes in a shallow roasting pan coated with cooking spray
Drizzle with oil
Sprinkle with salt and pepper; toss to coat
Bake for 30 minutes
Add onion; stir well
Bake an additional 30 minutes
Spread butter over sweet potato mixture, stir to coat
Bake 10 minutes more
Today, I had this as a snack but tomorrow I plan to have this as a meal with some eggs (prefer scrambled but may need to hard boil to take to work). Of course, I already shared this with my elf. But I 've also been reading The Bridesmaid by Beverely Lewis. Because I love a good Amish romance. I'd consider being Amish if it wasn't for the Twitter thing. LOL
