Oscar the Muffin

Hello, Hello!
Kind of late tonight, I know...
Homework kicked my boo-TAY today! 
A few days ago , I talked about not being afraid to experiment with food and to not let your food be boring.
I told you about my Green Muffin and how it resembled this guy:

Oscar the Grouch, one of my favorites!

I didn't get a pic before, so I made sure to take one the first chance I got. And to make it even better, I added blueberries into this one! Haha!

I have to say, it kind of resembles the Leaning Tower of Pisa, but that doesn't matter because you must do this...

In order to eat it properly. And yes, that is steam coming off of the green monster...Ha!
Ok, it looks scary...I know, but it was SO yummy!!!!
Oh, and let me add in here, you absolutely can not taste the spinach. There is no hint of that 'green' flavor anywhere.


You are wanting the recipe SO bad, I know!

Green Monster Muffin

Ingredients
2 Tbs. Arrowhead Mills Organic Spelt Flour (or flour of your choice)
2 Tbs. Oats-Bob's Red Mill 5 Grain Rolled Cereal (dry)
6 Tbs. Egg Whites
1 Tbs. 365 Organic Flaxmilk Original (Or milk of your choice)
1 cup Spinach
1/2 cup Blueberries
1/2 tsp. Baking Powder
Cinnamon
Vanilla

Mix wet and dry ingredients in separate bowls.
Combine all the ingredients and pour into a large microwave safe mug.
(I use a 2-cup Pyrex measuring cup)
Microwave for about 5 minutes.
Remove from microwave, invert onto serving plate. Allow to cool just a bit and enjoy!

 To be honest with you, a lot of people give me a hard time about the things I eat. But I LOVE the 'weird' foods I eat! Not every experiment is a winner, but I still have fun and go on to the next concoction!
