For dinner last night, I was in charge of the vegetables! We had a head of broccoli and cauliflower in the refrigerator so I decided to get creative. I ended up making Orange Roasted Cauliflower & Broccoli with fresh grated ginger!
Before putting them into the oven, I tossed the cauliflower and broccoli florets in a bowl with:
3 T olive oil
2 T fresh squeezed orange juice
1 T fresh grated ginger
1.5 tsp salt
1 tsp white pepper
large pinch of red pepper flakes
They roasted in the oven for 15 minutes at 500F, which I made sure to stir every 5 minutes or so to ensure even cooking. I even grated a little fresh parmesan cheese on top, once they came out of the oven.
What an easy & deliciously wholesome way to prepare broccoli & cauliflower! The flavor is incredible. I’ll never go back to steaming these vegetables again!
For dinner last night, Rob cooked up some German Bratwurst. I filled half my plate with veggies so I’d only have one of these bad boys… I was stuffed afterwards!
Rob also reheated some traditional German sides left over from a holiday dinner! We had sauerkraut, rotkohl (red cabbage)and knödel (potato dumplings). Everything was slathered in a spicy mustard. It may not win any awards for appearance (Rob tells me German food isn’t known for it’s visual appeal) but my first taste of German cuisine was delicious!
After 10 hours of sleep & a brisk, late morning run, Rob and I are getting ready to head into D.C. to tour a museum and have dinner with friends! I’m quickly adapting to being on vacation… it’s going to be a rough going back to work next week and starting classes the week after!
