Happy Thursday loves! I’m getting to the blog a little later this morning… sorry for those checking up to see if they won the copy of Operation Beautiful… I’ll get to announcing the winner, right after I tell you about my delicious dinner (unintentional rhyme- score!)
I wish I could say I created this recipe (I didn’t), but it’s one of my favorites and if you haven’t tried it, you must! It’s from Cooking Light and it has wonderful flavor and crunch and is 100% man-approved!
Cornflake Encrusted Halibut with Chile-Cilantro Aoili
The first step is to make the aoili (which I love because it’s so easy but makes the dish sound so fancy!). Gather your indgredients…
1 Tbsp minced fresh Cilantro
3 Tbsp Fat Free Mayo
1 Serrano Chile, seeded and minced
1 garlic clove, finely chopped
Mix all those ingredients together and put in fridge to chill. Easy squeezy.
The it’s time to set up the assembly line.
Take your 4 (6 oz) Halibut Fillets and put them on a plate. Then set up a shallow dish that includes:
2 cups Corn Flakes, crushed up
or use these…
brilliance!
1/4 c all purpose flour (if you use whole wheat, let me know how it works!)
1/2 tsp salt
1/4 tsp pepper
Mis all those dry ingredients together.
Then in another shallow dish combine 1 c skim milk with 1 egg white, beaten.
Argh!
Remember those eggs I had for breakfast??…SHOOT.
Luckily I discovered it works just fine without the egg white
Another side note:
Halibut is expensive!! It’s $21/lb right now. Eeks! But I bought mine in the frozen section for $9.49 and let it defrost on the fridge for a day- WAHOO budget friendly!!
Heat 2 Tbsp of olive oil over medium in a large pan. Then take each fillet and dip it in the milk/egg mixture, dredge it through the cornflake mixture, and set it in the pan.
Cook for 4 minutes on each side, until it is flaky on the inside.
Plate each fillet with 1 Tbsp of aoili and a lemon wedge. Dig in!
