After months and months of reading about these so called "green monsters" on food blogs, I finally got up the nerve to make one. So many blogs that I read go on and on about them and how refreshing they are, but I honestly just couldn't get beyond the quantity of spinach that goes into them. And I don't have a vita-mix... just a regular blender.
But, I am SO happy I finally got over my fear. These things are awesome. So awesome that I have had one every day this week since Monday. I am going through spinach like crazy (and my stomach has finally adjusted to the extra fiber intake). I just followed the very simple formula and made mine with the following ingredients 1/2 banana 3 cubes ice 3/4 cup vanilla no sugar added almond milk 1 tbsp almond butter 1 scoop protein powder 3 giant handfuls of spinach
I put it all in my blender and pulsed away for about 10 -15 seconds. It was absolutely delightful... very refreshing... everything all my favorite food bloggers have said it is.
I am now kicking myself for not trying this earlier! I should of known! I love all the other recipes these girls put on their blogs, so why would they be so wrong about this one? No worries though... I'm so glad I finally made it. I see many green monsters in my future.
Wes even tried a sip of one that I saved in the fridge. I think he liked it. Once I make him a fresh one this weekend, I know he will be sold. Please please please make one, especially if you are at all lacking on your veggie intake. There is no weird spinach taste at all!
Enough about that...
Boston was absolutely wonderful (minus the rain). Wes got to show me around Providence where he went to school and introduced me to an old friend/classmate. RISD is SO pretty. In my opinion, it is a runner's paradise. Hills, parks, water to run around, green everywhere... I loved it. Although I probably wouldn't love it nearly as much in the winter (we all know I hate the cold). Boston was a beautiful city. I'm not exactly sure what I was expecting, but it was just so pretty. For some reason, I was thinking it would be like New York City, but it is so much prettier...and cleaner. I definitely want to go back and explore more of the city. And Wes' cousin and his family were an absolute treat to stay with. We had a great time.
This was around Mark's neighborhood (one of Wes' college friends). Jealous!
