Off To A Great Start

Hi!  I hope your week is off to a wonderful start.

I’m anticipating another busy week over here, but my attitude is much improved over last week so I should be able to take it in stride.  I had such a wonderful and busy weekend (and officially launched the new biz! ) which must have set me up for a good start. :)

After my basically exerciseless week last week, I was determined not to make a habit of being lazy and kicked my butt into gear over the weekend to get some momentum back.  In addition to hiking and dancing on Saturday (oh yeah, dancing totally counts.  I had sore ribs…who gets sore ribs from wobbling around like a fool on the dance floor??), I fit in a ~3.5 mile jog on Sunday which felt absolutely wonderful.  I’ve been rockin the shorter distances lately in an effort to put on a bit of weight (5-7 lbs. is my goal because I am a tad underweight and don’t like the way I look at the moment) but still get some cardio in for my own sanity, and my chronically sore hamstring is also feeling much better as a result.  Win win?

Tonight, I hit the gym after work for a little treadmill mishmash.  I basically alternated 5 minutes of running between 7-7.5 mph with 5 minutes of steep incline walking to get a little booty workout.  It was surprisingly enjoyable and 40 minutes went by pretty quickly.  It was also a great way to get in a bit of lower intensity cardio that still made me sweat.

Today’s eats have been pretty good, as well.  In addition to my exercise rut, I have been in a bit of a cooking rut lately.  I haven’t felt all that inspired to make any of my usual , so I branched out a bit and got some pecan-crusted salmon at TJ’s during my weekly shop last night.  I figured it was a good balance between premade and homemade because I wasn’t about to go buy pecans to make my own “crust”.  I baked it for about 15 minutes at 375 degrees, then another ~12 at 400 and it came out perfectly crispy on the outside and did not dry out at all on the inside.

I served it alongside some sweet potato slices that I drizzled in olive oil and sprinkled with sea salt and cinnamon before baking for about 40 minutes.  Additionally, I sauteed a bit of kale in some garlic, olive oil, and sea salt for some absolutely delicious greens.  I was totally enamored with this dinner!

We ate while watching House (yay, blood) and 2.5 Men.  Moo visually assaulted our dinners before perching on our shoulders/the back of the couch to try to grab some with his poo paws (we call them “poo paws” because of their close proximity with the litter box).  He is a pretty gluttonous cat, after all.

In addition to a tasty dinner, earlier food items from today included an un-pictured brie and avocado sandwich for lunch (decadence, my friends), an apricot mango Greek yogurt as a mid-morning snack because I ran out of time to eat it before work,

and a wafflewich for breakfast.

Plans for the rest of this week include some good sweat sessions, acupuncture, and a hair cut!  It’s been a few months since my last one and my hair is getting a little shapeless.  I used to very rarely get my hair cut (I’m literally talking once every 2 years at the most), but I’ve been making more of an effort to keep it tidy and professional-looking in the last year or two.  My hair is just below shoulder-length at the moment, and I would love to get something like this:

But seeing as I don’t look like a movie star, it might be hard to pull it off quite like that :)
