nutritional yeast & fro-yo

Posted Mar 13 2010 12:00am

How was your day? Mine was pretty good.

This afternoon, I spent some time hanging out with Harris (who leaves tomorrow… sad face!) and convinced him to buy a Garmin! He got a similar watch to mine, but the model without the heart rate monitor. He’s been running way longer than me so I was shocked when he had never heard of GPS running watches. I changed that.

Lunch held me from noon to 4pm! Nice! But I did get hungry and have a snack :)

Blueberries; 1 wedge Laughing Cow Garlic & Herb light with 1 serving Kashi TLC Original 7 grain crackers

I then took the puppy on a nice walk to get some vitamin D and wear some energy out of her (a hopeless cause, really). When I got back from our walk, I crashed on the couch and slept for 30-ish minutes. When I woke up I grabbed this cutie from the nearly empty fruit bowl.

I was actually surprised that the 5 mile run this morning didn’t rev up my appetite quite like it has in the past. I think my body is getting used to my increasing mileage, which is good. I hate feeling ravenous. Don’t get me wrong, I was hungry, but I wasn’t about to gnaw my arm off all day.

Everyone was gone for errands this afternoon, so when Mona got back she wanted to make a big dinner for us. She made a really good, and surprisingly light, tomato cream sauce for some whole wheat spaghetti. It had a lot of veggies and some light evaporated milk for the creaminess. Then it was put through the food processor and was a great texture. I was in charge of roasting brussel sprouts, which I tossed with a little olive oil, balsamic vinegar, salt, pepper, and dried sage. 20 minutes in the oven and they were ready to go.

Whole wheat spaghetti topped with homemade tomato cream sauce and some nutritional yeast (for protein).

And a lovely glass of cabernet!

The nutritional yeast on the spaghetti was awesome! It has a great kind of cheese-like taste, is low in calories and fat and has 8g protein in 1 1/2 tbsp! Not bad! It says on the label “Vegetarian nutrition support” so I was glad to see it had some lean protein. I will definitely be getting use out of this!

I had a couple sips of the wine while cooking, so I had a bit more than was pictured. I also had a few crackers and some brie cheese while helping prepare our dinner! Just being honest!!

Harris was dying for frozen yogurt, so for the 3rd time in 7 days we went to the frozen yogurt bar, but this time Mona and Jeff came with us. I’m officially an addict and they are in love with the place too! Tonight I went a little wild and got cone pieces :)

Low-fat cake batter frozen yogurt; low-fat blueberry pomegranate frozen yogurt; strawberries, bananas, chocolate chips, cone-pieces.

I’d really like to take my bike out tomorrow, but it looks like it is supposed to rain all day tomorrow. However the weather forecast lied already and told me it was supposed to rain all day TODAY, and we had some sprinkles in the morning and then it was sunny and warm all day. So we’ll see when I wake up what the weather actually does!
