Not your average quinoa.

Yesterday I was ambitious and decided to prepare dinner before going back to work!  It is so hard for me to start cooking at 7pm because I know the food will take another 30 minutes or so and that is just way too long for my stomach at that time.  I threw together a very simple dish, combining ingredients that I had in the house.  We make quinoa often, but usually with water, cooking the quinoa with vegetable broth added a nice, subtle flavor.  The husband loved the overall combination, the tell tale sign of a good dish is when there are no leftovers :-)

Quinoa with Mushrooms, Spinach, and topped with Pine Nuts
Ingredients1  cups quinoa
2 cups vegetable broth
1 1/2 tbsp olive oil
1/2 cup white cooking wine
container of mushrooms
1 bag of pre-washed spinach
2 cloves of garlic, chopped
Salt and pepper for taste
Pine Nuts if desired for topping

For the quinoa:
Prepare quinoa as recommended on the package (2 cups of water and 1 cup of quinoa).  Instead of cooking the quinoa in water, use vegetable broth for extra flavor.

For the mushrooms and spinach:
Heat the olive oil in a large saute pan on medium heat.  Add the mushrooms and half of the white cooking wine, saute for 2 minutes.  Add the spinach and the other half of the white cooking wine, and saute 2 more minutes. Add the chopped garlic, salt, and pepper.  Saute for a few more minutes.  
Combine the quinoa, mushrooms, and spinach and top with pine nuts for extra flavor, and if so desired a little parmesan cheese (in my opinion it makes everything taste better).
