What a bummer of a Monday morning! Lately I’ve been really digging this Pilates class at my gym at 9 a.m. Mondays, so today, despite it being finals week and not having any classes, I resisted the urge to hit the snooze button and got up at 8 to make breakfast, go to Pilates and start my day.
I got to the gym to find that Pilates class was canceled because not enough people showed up. Booo. I figured I might as well do something since I’d made a trip to the gym, and I’d already put 50 cents in the parking meter, so I did 20 light minutes on the elliptical and then came home and did some free-weight arm exercises. Behold, the cinnamon fruit-filled omelet! I was more than a little intreagued when I saw this post over at the edible perspective, and her pictures of this were so gorgeous, I just had to try it. I have to say, this is a great pancake substitute for those of us gluten-free guys and gals; there’s no flour, even though it looks like a pancake.
2 tbs. milk
1/8 tsp. salt
1 tsp. vanilla extract
1/2 tsp. cinnamon
Your choice of fruit for filling (I used bananas and blueberries)
Greek yogurt for topping
Beat together the first five ingredients. Pour into a small pan over medium heat, cover and cook until eggs are set (I had to flip mine because they weren’t cooking through, but it was easy to flip). Fill with fruit and top with Greek yogurt.
If you make this, don’t skimp on the fruit or the yogurt — they provide most of the flavor. I used about half a container of blueberry Chobani mixed with a dash of cinnamon and maple syrup, and it was deeelicious! Was this a mind-blowing breakfast? No. Was I happy I ate it, and will I eat it again? Yes. Especially with all the protein it packs!
