No-Bake Vegan Peanut Butter Chocolate Chip Cookie Dough Balls with Extra Protein Option

Hi Bloggie Friends! What's shaking in your world? My world has been lovely because I got together for a much needed coffee-n-chat session with Madeline . We met at our usual spotcomplete with 91F temps in the shade. It's gone from cold to hot in a 2 week span here in Phoenix. Spring? What's that? I actually sat in a sports bra, worked on my tan, and poured off sweat. I thought putting a shirt on for the photo op's was wise. It had been awhile since Madeline and I had a one-on-one coffee sesh because the last time I met Madeline was at This Blogger Meetup and we met Jenn that day, too! Today Madeline and I caught up on life and shot the breeze and it was great. And of course, my little Blogger Meetup Sidekick, Skylar, comes on all my adventures.Complete with interruptions, a high need to eat me out of house and home with snacks, and puppet showsfor all at the table, but hey, she's 3 and is a good sport. And as I mentioned yesterday, Scott's traveling so it's important for me to have some meaningful adult conversation after days on end alone with a 3 year old!Mission accomplished on the meaningful adult conversation front. Thank you, Madeline ! Can't wait til our next girl date!
No-Bake Vegan Peanut Butter Chocolate Chip Cookie Dough Balls (with a High Protein Option) 1/2 Cup Peanut Butter (I used crunchy PB because it's what was open but you can use Almond Butter, Sunflower Seed Butter, Cashew Butter, or another nut butter of your choice) 3-4 Tbsp Coconut Flour (or another flour if you don't have coconut) Or, for the Extra Protein Option, use 3 Tbsp of your Favorite Vanilla or Neutral-Flavored Protein Powder 3-4 Tbsp Maple Syrup/Agave (or honey, or yacon syrup) 1 Tsp Vanilla Extract 1/3 to 1/2 Cups Chocolate Chips (or carob, or cocoa nibs) Yields 10 to 20 balls depending on preferred size
Combine all the Ingredients except the Chocolate Chips & Stir Until Combined
Play with the flour (or protein powder) and syrup/agave amounts if need be. Troubleshooting Tips: Add more syrup if too dry and more flour if too wet.
After the mixture is combined, Add the Chocolate Chips & Stir them In Form into Balls and Store in Fridge Don't Store these in the Freezer unless you can wait for them to come up to Room Temperature when you want to Have a Cookie Dough Ball, since the Nut Butter Will Freeze Fairly Solid

I enjoy them, but Skylar loves them and I don't mind giving a few to her because first of all, she's a kid and burns it off, but secondly, the Nut Butter is a Nice Protein Source for my Vegetarian Toddler!

Truth be told, I didn't bring any cookie dough on the blogger meetup. So far today, among other things, Skylar's had Chunks of Energy , a quarter cucumber, a huge handful of grapes, 2 apples, 2 pears, some sugar snap peas, and broccoli for her fruits and veggies. We save the "treats" for after dinner and focus on the fresh fruits & veggies, nuts and seeds, for most of the day.

Prior to becoming a food blogger, I never entered blogger give aways because frankly I had no idea they existed.Now, I do enter a lot of give aways for two reasons. First, it shows support for other bloggers, for their efforts, their blog, and their give away. Plus, I want to be a team player, and many of them have entered my give aways, too, and I want to support them like they supported me. And secondly, sometimes you can win great stuff that I would never spend money on myself, but as a give away win, i.e. free!... it's a total score! I don't consider myself "lucky" either. I view it as a numbers game, and well, I enter a lot of give aways which is what I attribute winning things to more so than anything. 2. Is it Getting Warmer Where You Live? If you had to Sweat Buckets or Wear 6 Jackets and Freeze, if you had to pick a Temperature Extreme, would you do better in the Heat or the Cold? I am a Hot Weather Girl all the way. I hate the cold! Grew up in the midwest with cold and blowing snow and hated every second of it! Never again. I'd rather sweat!
3. Yesterday I asked for your Gym Workout & Gear Advice about Stores, Brands, etc... Thank You for those! For those of you who workout with an ipod, first, Give me Some of your Favorite Tracks that totally Pump You Up and keep you goin'! I admit that my music taste so eccletic from Ani diFranco to Black Eyed Peas to vintage Journey to some hardcore gansta rap. I'm all over the map. But would love your fave tracks to load up on my ipod! Also, what armband or waist clip or device do you use to clip your ipod on? Fumbling with constricting armbands or clips that dig into my abdomen that are on my shorts or messing with cords and earbuds is the reason I don't lift with my ipod but I like to. How do you Wear or Fasten Your ipod? And Fave Tunes, Please, too!
