And last night I attempted something I've been wanting to try for quite some time, the vegetarian equivalent of meatloaf. I made Angela's Ultimate Vegan Lentil Walnut Loaf . I really liked it.
Others made comments such as: 'I don't like nuts in my food', 'This sauce on top is too spicy', 'This sauce on top is too sweet', 'Are there nuts in this? You know I don't like nuts'. So I guess it went over like a lead balloon. BUT I liked it and since they all still like their meatloaf, I now have something for me when they have theirs.
Every year for D's birthday I make his favorite meal, meatloaf, mashed potatoes, green beans & corn. I make the meatloaf in the shape of his age. I've been doing it for years. I don't think my loaf will number shaped though.
Next time I will double this recipe (even though it made 2 loaves) for the freezer. There are a lot of steps! I also will process the walnuts instead of just chopping them, so they are a bit finer & I didn't add raisins, just a little extra grated apple. I also just winged it on the seasonings as usual and made my own sauce for the top (V8 juice, BBQ sauce, balsamic vinegar).

I thought about making a vegetable for the side and realized this thing is chock full of vegetable goodness! Of course you can never have too many, I think. If you're feeling adventurous, try it-I think you'll like it! I see a vegan loaf sandwich in my future!
