Nachos and Hockey

I forgot how yummy nachos are. I don't eat them very often because when you order them at restaurants they are usually really greasy + cheesy + salty, etc, etc. Tonight I made them myself and tried to make them as healthy as possible without sacrificing any of the flavor. Bryan wanted chicken in his so I made his a little different. They were pretty much the same as mine except his had 1 boneless skinless chicken breast cut into strips, mozza cheese, and less chick peas. These are super quick and easy to make!

You will need:
    1 bag of multi-grain tortilla chips1 sweet red pepper1 medium spanish onion6-7 fresh mushrooms (sliced)1/2 cup chopped green onion  1/2 cup baby spinach (shredded)1 can of chick peas 2 tsp olive oil1 tsp garlic powder2 tsp chili powder2 tsp oregano1 tsp cuminmild salsa fat free greek yogurt
  • 1 tbsp nutritional yeast


Sautee the onion, peppers, green onion, mushrooms, baby spinach, and chick peas in some olive oil. Add the spices and herbs and sautee until onion is transparent. Before you remove from heat, add in 3-4 tbsp of salsa. Sprinkle with nutritional yeast and dig in. :) We dipped ours in greek yogurt and salsa.

Bryan's Nacho's with cheese and chicken


Today I went for another run. I have been running on a regular basis now...ever since I decided to sign up for the Tely 10 Mile Race. The fact that I have a race to look forward to gives me a reason to keep running and keep pushing myself. I must say, it sure is a great motivator.
Tonight Bryan and I are going out to our friend's house to watch the Boston Bruins kick Tampa Bay Lightening's ass. (Goooo Ryder!!)
I picked up some Bailey's and Iceberg Vodka because I have an amazing drink recipe planned in my head. I am going to mix up some cold coffee, vanilla soy milk, Bailey's, Vodka and Crushed Ice. Sound good? Hell yeaaas.
