My Super Veggie Packed Almost a Chili (working title)

When you have a busy week ahead, it helps to prepare a meal with longevity. Bonus points if it’s healthy. This meal will last for a couple of days for lunch/dinner/whatever & saves mucho time.

My Super Veggie Packed Almost a Chili

Did I mention it’s also super simple to make? Well it is.


  • 2 bell peppers
  • 2 medium sweet potatoes or one large
  • 1 can of no salt added chick peas
  • 1 can no salt added corn
  • 2 cans no salt added diced tomatoes
  • 1 can no salt or low sodium tomato paste
  • 1 large white onion
  • 2 tbsp of the following: chili powder, oregano, cumin
  • pinch of red pepper flakes

Pre-tomato stuff

The directions are as simple as letting the onion sautee for 10 minutes while you chop the rest of the veggies. Add the sweet potato and bell peppers, rinsed corn & chick peas, and the tomato stuff. Add 2 can fulls of water, and let it boil for another 10 minutes, then simmer for 40 minutes. Mmmmm.
To make it more “chili” like, add a little bit of skim mozzarella on top.

And this is pretty much ALL vegetable. It has very little sodium. So the next time someone punches you in the face for not drinking a V8, you can punch them right back for drinking a god-awful cocktail of dirt and vegetable remnants. Eat my veggie powerhouse chili instead!

Both Rent & The Parent Trap are on TV right now. Hardest decision ever. Although this is probably the worst cut of Rent ever. Thanks CW for butchering Out Tonight. Perhaps I will watch Lindsay in all her youth & cuteness before she turned into whatever it is she is today.

I came up with the most awesome breakfast idea and now I wish it was breakfast. But that would also mean it would be Monday, so I can wait . There’s still a lot of Sunday left to enjoy! I might take a walk/rollerblade later. Or, like right now. Because I’m spontaneous like that.
