My Idea of an Awesome Weekend

What did everyone do this weekend?

I went to Milwaukee for a weekend of healthy cooking and working out. My boyfriend and I crossed the border to visit with one of his clients who also happens to be a friend. We spent the weekend learning new exercises at the gym and cooking healthy, delicious meals.

Here are a couple highlights of the food that I prepared:

The quesadilla was a new recipe and the salad sitting next to it is the same salad as last week with the Spicy Pineapple Dressing. It was so delicious the first time I had to have it again. Note that the quesadilla had a spoonful of non-fat plain greek yogurt. I added extra protien to the dish without the fat or calories and it tastes just like sour cream.

This zucchini salad was amazing too! I will definitely be making both dishes again.

After this weekend, I am completely rested, relaxed and feeling great.  I feel like I was on a vacation moreso than just an overnight trip.

I learned a very valuable lesson this weekend: Plan activities that support my goals. My goals are around health and fitness so activities that have me do something where I am eating well and being active are perfect. The more fun I make it, the more likely I am to continue to stay on track with my goals.

Ground Rules Status Check for Saturday & Sunday
• Schedule my workouts in my calendar and do them as intended — did the workouts, did not put it in my calender both days (ran for 40 minutes on Saturday in the heat, did not give up, finished the run)
• Schedule time (at least 15 mintes) in my calendar to work on Eating 101 and do it — did it but did not schedule time in Calendar on Saturday
• Log my food & liquid intake — done
• Log workouts — done
• Post on this blog — did not do during weekend. Will work on developing a system for posting on the weekends.
