After the morning program, I headed out to the barn to get in a good ride. I must say, riding is my absolute most favourite way to exercise (if you hadn't guessed that already)! A good ride activates almost every muscle in your body, engages your core, helps to work on your balance, helps stretch out some of your muscles and also keeps your mind clear! If I could ride all day every day, I would be more than happy to do so!
When I got home from the barn, I was pretty hungry! I reheated my leftover piece of steak from last night, added some honey garlic sauce on top and had some coleslaw on the side. It was a quick and easy lunch that did the trick1
Before I left for the after school program, I also had some Finesse 0% Greek Yogurt for some added protein. It was pretty good!
Casey and I decided to make a roast for dinner tonight. Last night, we prepped some onion, red potatoes and baby carrots so that all we had to do was throw it all in the slow cooker this morning and turn it on. We let it sit on low all day long and it was ready to eat by the time 6pm rolled around. It also made the apartment smell fantastic!
It may not be the prettiest looking meal ever, but boy did it taste amazing! The meat was so tender that it fell apart under the knife. The vegetables had so much flavour and everything just melted in your mouth. We need to break out the slow cooker more often!
