Combine all the ingredients in a large microwave safe container. Cover with paper towel (it may splatter). Microwave for 15-20 minutes. Stir after 10:00. It will reduce down by less than half. Carefully stir in 1/2 tsp. Vanilla Extract. Pour into shallow container and freeze until set.
