1 cup Wild Blueberries (I used frozen) 1 Tbs. Chia Seeds 1 packet SweetLeaf Stevia 2 Tbs. Water Combine berries, chia and sweetener. Microwave for 2 - 2 1/2 minutes. Stir in water. Cover and refrigerate for several hours or overnight. Enjoy! Serving Size: 1-Tablespoon Number of Servings: 12 Calories: 16.7 Total Fat: 0.8 g Sodium: 0.1 mg Total Carbs: 2.3 g Dietary Fiber: 1.0 g Protein: 0.4 g It is hard not to eat with a spoon, ok...I totally ate a few spoonfuls of the stuff. It is a lot like blueberry pudding, not that there is such a thing but that's what it's like! I enjoyed it on my yummy monster sized protein muffin! Check out the steam coming off that baby! Here's the recipe for that, I just left out the 'frosting': Basic Protein Muffin: 1/2 cup canned Pumpkin 1 1/2 Tbs. Flour of your choice 1 scoop Chocolate Protein Powder (16 grams) 1 tsp. Baking Powder 1/4 tsp Baking Soda 1/2 tsp. Sweet Leaf Stevia 1/4 cup Flax Milk (or milk of your choice) 1/4 cup Egg Whites (I used powdered with H2O) 1/2 tsp. Vanilla Frosting: 1 tsp. FF/SF Chocolate Jell-o Pudding (dry) 1 Tbs. Sugar Free Maple Syrup Combine Muffin ingredients in a microwave safe mug (I use a 2-cup Pyrex measuring cup) Microwave for 5-6 minutes (Times may vary) While the muffin is cooking, combine frosting ingredients. Turn out muffin, cool just slightly, spread with frosting and Enjoy! Servings: 1 Big Muffin Calories: 210.1 Total Fat: 2.1 g Cholesterol: 10.0 mg Sodium: 263.0 mg Total Carbs: 25.1 g Dietary Fiber: 7.5 g Protein: 22.0 g So there you have it! Life is kind of getting in the way of my life right now! Ha!
Honestly, I am trying to regroup and figure a few things out.
I am totally swamped with homework, and just trying to find enough hours in the day.
I have a 4-mile race in Ft. Wayne this weekend and I am SO excited!
I am meeting up with 3 friends that I have never met in person! We met online and this is our first chance getting to hang out. I could NOT be more excited!!
I had a nice 4 mile run today. Wait, nice? The run itself was good (and much needed) the weather was another story...It was wet and foggy and rainy and seriously gloomy and weird. I was sweating like crazy, so that made it better!
So on to some fun stuff to distract from the fact that I haven't been an award winning blogger{sorry!}
