Mushroom, Spinach, Tomato Frittata with Feta Cheese

Intro by Carla: Really excited to share this delicious vegetarian frittata recipe with your all from Marguerite. I am hoping to start having ‘meatless Monday’s’ so this is something yummy can’t wait to try it out myself. 

Those who are overweight or obese are always on the lookout for effective ways to achieve weight loss. While exercise is the main ingredient in the recipe for weight loss, it will not have any effect if no restriction is placed on the diet. Do you think there is going to be any effect in weight training for an hour, followed by binging? You gain nothing other than exerting yourself. So for any weight loss program, diet plays an important part.
The diet has to be planned in such a way that the body gets the required nutrients, while at the same time avoiding foods like high carb, refined and fatty foods. You need to follow a diet plan to have long lasting results of weight loss. Further, after attaining the desired weight loss, it is necessary to stick to some sort of a diet plan to maintain the weight. There are many ready made diet plans available in the health market. You can also formulate your own diet plan ensuring that it provides your body with the necessary calorie intake needed to perform the day to day activities CarlaAs you know I don’t believe in diets or rather diet plans. You need to work with what you have available and fresh foods that you feel comfortable with. A diet should be one that consists of healthy food choices. You don’t need to buy diet plans if you focus on eat clean simple foods.



  • Mushrooms, sliced – 3 cups
  • Spinach, chopped – 3 ½ cups
  • Tomatoes, sliced – 2
  • Onion, Chopped – 1
  • Garlic clove, minced -1
  • Eggs -6
  • Virgin olive oil – 1 tbsp
  • Pepper – ¼ tsp
  • Salt- ¼ tsp
  • Fresh oregano – ½ tsp
  • Low fat milk – ¼ cup
  • Feta cheese, crumbled – ½ cup


Add virgin olive oil in a pan. Ensure that the pan is oven proof, (because you need to later grill the dish).

When the oil is slightly warm, add garlic, onion, mushrooms, salt, pepper and oregano and cook till the mushrooms are cooked. This would take approximately 8-10 minutes. Mushrooms cook very fast. Since you are adding onion and salt, they would release water which would cook the mushrooms till they get tender.

Now add spinach and cover the pan. Cook for about 5 minutes. Do not overcook the spinach (it should be crunchy, but not raw). You will have a colorful medley of veggies. Mushrooms, enriched with proteins and spinach, offer the goodness of fiber. A very good combination of building muscle while burning fat (protein for muscle building and fibrous foods for losing body fat).

In a mixing bowl, whisk the eggs and add milk. Keeping the heat low, add the eggs, milk and feta cheese to the cooked vegetables and mix it well. Cook till there is no liquid left. (If flame left on high, the milk might curdle).Place the sliced tomatoes on top and cook uncovered for about 10 minutes, ensuring that it does not become too dry.

The sight of the dish would be quite pleasing to the eyes, tasty on the palate and healthy for the body.

Set the dish in the grill for 5 minutes. You need to grill for the browning effect (just as you would while making a baked vegetable). The Frittatas are all ready to be devoured. It’s very healthy and being a Mediterranean diet, it is good for the heart and effective in weight loss.
