Hey, Lovelies!
I hope everyone had a nice long weekend. It went really quick! I enjoyed a lot of time with family and friends. I ate WAY too much of this pie :
Like, I had it for breakfast one day and lunch another, and dessert later on. When I looked at the four slices that were left in the fridge, I had to toss them out because I totally would have eaten half a pie in 3 days. It was that good, it was Thanksgiving; and we really didn’t have a lot of food in the house. I figure if I eat pretty light meals through the day it all evens out, right? Or I will use what Michael says to justify my behavior: “the pies you make are healthy I thought?”
Since Ella was born Michael and I always say how we never get a chance to go to see the latest flick in the theater. When we DO have a babysitter on a Saturday night we would rather go out and meet friends for drinks than go to the movies. Pre-baby Friday nights were for dinner and a movie; Saturday was for play. I went to see Breaking Dawn last week, and Michael couldn’t stand it any longer he said I needed to go to the movies with him over the long weekend.
We got my sister to babysit on Friday night. It was her first time watching Ella alone, and our first time seeing a movie where it’s frowned upon to check your phone, even if it’s just for a text message.
We arrived at about 6pm for the 6:30 showing of J. Edgar. We are those people that get to the movies extra early to snag a good seat.
After we purchase our tickets Michael buys himself a soda, I had water and my home made popcorn in my bag [which I will tell you about in a bit]. We got to the ticket holder and he tells us that the theater is not clean yet, so we go back to the lobby to wait with all the others.
A little back story here…when Michael and I started dated about 10 years ago, we never went to the movies. Someone along the way mentioned it being a good place for a terrorist attack and we just never went. Obviously we got over it and have enjoyed going for many years but we were crazy freaks for a while about it.
Finally they let us in a 6:22. Which may not seem weird, [I thought it was] but we ALWAYS go to the movies early on a Friday, and we went to a theater that isn’t even that busy since some of the newer ones popped up in our area.
The theater we went in was a very small one. We sat in the back row on the end right next to the door in case I needed to go outside to call Carly. We texted a few times before the previews, then I told her to text me if she needed me because the movie was starting.
About 15 minutes into the movie the little man comes in with the glow stick thingy checking the exits. Now the last time I saw that was when I was a kid and people were known for movie hopping and they would come around a check tickets. We used to have to hide candy and cans of soda in our Starter jackets back then too lol.
I’m not going to lie. The usher checking the exit freaked me out. I am overly paranoid now that I have a kid. My mind starts wandering and I am thinking “why didn’t they let us in the small theater right away?” It couldn’t have taken that long to clean. “Why is he checking the exits?” Then, I got a text from my sister asking about giving Ella more milk from the fridge. I went outside and saw a cop looking concerned in the hallway. My buggout continued. I went back in and told Michael, who I already had freaked over the glow stick guy.
Then, every 10 minutes someone would walk in our theater, stay by the back door where we were, then leave. I was seriously bugging out big time. All I kept thinking was a bomb was about to go off or some crazy person was loose in the movies with a gun. Or that there was a threat of a fire or something. Apparently Michael was a nervous wreck as well, which I learned after we left.
The movie was over at about 9 and we couldn’t get out of there fast enough. Michael told me I had him all freaked out and that he was ready to ask me if I wanted to leave at 8:37. We were cracking up laughing over the experience on the way home. We stopped at the mall so Michael could grab a slice of pizza (I had leftover lentil loaf…and pie). Then, when we were about 3 minutes from our condo I swore the SUV behind us was flashing their high beams on us. Actually I swore they were straight up trying to blind us following close. I was like “MICHAEL, PULL OVER!” “Their TAILING US!” He’s all: “You are SUCH a buggout!” “Are you sure you didn’t smoke something before we went to the movie?” We laughed so hard we had tears down our faces. You had to be there
Anyway….back to the popcorn…..
Michael poo pooed me when I told him I was bringing my own popcorn to Breaking Dawn. Until he tasted it.
Usually I am not a freak about it and just go with the movie popcorn. Every so often I would bring my own snacks, but one of the joys in life is sharing a large tub of salty popcorn with Michael. We never add all that fake butter [which can make a medium sized bag add up to 97 grams of fat !]. I have changed my ways when I started making popcorn that tastes BETTER than the crap you get at the movies.
Making popcorn at home…what are your options?

We all know that air popped popcorn is probably the lightest way you can enjoy popcorn. Microwave popcorn is crap. The chemicals in the lining of the bag are called PFOA, perfluorooctinoic acid, which is a carcinogen that is released when the bad reaches a high temperature in the microwave. Some studies say this chemical may even contribute to infertility.
As a kid, we would make popcorn on the stove from kernels in a large dutch oven. Then they came out with those little foil popcorn that puffed up and you had to shake it constantly or it burned. It brings back so many good memories from Saturday night sleepovers at my house, watching back to back scary movies with the babysitter.
I love making my own popcorn. Until we invest in a popcorn machine to make the air-popped version, this is a husband-approved method that even got HIM to give up the unhealthy tub at the movies!

Movie Theater Popcorn
serves: 2
The Fitness Dish
Ingredients:
2 Tablespoons grapeseed oil
1/3 cup popcorn kernels
2 Tablespoons Earth Balance butter, melted
1/2 tsp sea salt, and more to taste
Method:
Heat a large dutch oven with the oil and 2 kernels of popcorn and 1/2 teaspoon of salt, uncovered. Once the kernels pop, pour the rest of the popcorn in, cover and shake the dutch oven side to side, front to back. Once the popcorn starts popping continue to shake it and wait until you hear the kernels pop 2 seconds apart. At that point remove it from the heat, shake a few more times covered to let any other kernel pop, then remove the lid.
Meanwhile melt the Earth Balance and then pour it over the popcorn, add more salt as needed and shake it around. Serve and enjoy!
Other seasoning ideas: cinnamon and stevia, or ground cashews and nutritional yeast to make it “cheesy”
