Sister-In-Law is in town (yay!) and the goal this week is to balance Paleo Principles with the amazing restaurant food this area has to offer. Today was another delicious day in Paleo-land.
Breakfast: A BIG plate of local eggs & bacon with farm market spinach & peppers.
Lunch: A big bowl of that delicious Sausage Stew with some extra meat thrown in from the roast I made over the weekend.
Snack: A bowl of Jersey blueberries and strawberries.
Dinner: My favorite spot in Collingswood, The Tortilla Press, has BYOB (Build Your Own Burrito) Mondays. I chose my ingredients and asked for them sans-burrito; side of gazpacho; and a delicious appetizer of plantains and guacamole (not pictured).
Sleep: I went to bed yesterday a happy, full girl! Full 8 hours. Did not sleep between optimal hours and lights were blazing past dark. Goal is sunset to sunrise – I was about 2 hours off. This week is special, though!
Today’s Workout : Approximately 15 minutes finding my One-Rep Max on the Front Squat; then 3 rounds of 500 meter rows (3 minutes of rest in between). Total time spent rowing – Approximately 6 minutes. Total time actively exercising: 21 minutes. (There may have been some socializing in there as well.)
